Ethyl 2-methylbutyrate (E2MB, CAS no. 7452-79-1, FEMA 2443) and Methyl 2-methylbutyrate (M2MB, Cas no. 868-57-5, FEMA 2719 ) are fatty acid esters obtained by the condensation of 2-methylbutyric acid with an alcohol.
Ethyl 2-methylbutyrate
Synonyms of E2MB are Ethyl 2-methylbutanoate and 2-Methylbutyric acid, ethylester.
E2MB appears as a colorless oily liquid with a fruity odor. It is soluble in alcohol and propylene glycol but practically insoluble in water (0.6g/L at 25°C). With a relative density of 0.865 at 25°C, it is less dense than water. It boils at 133°C and is classified as a hazardous flammable liquid (ADR Class 3, UN Number 3272, flash point 26°C).
E2MB occurs naturally in fruits such as apples, pineapples, strawberries, plums, and oranges.

Methyl 2-methylbutyrate
Synonyms of M2MB are Methyl 2-methyl butanoate and 2-methylbutyric acid, methyl ester.
M2MB appears as a colorless oily liquid with a fruity odor reminiscent of green apple.
It is soluble in both alcohol and di propyleneglycol. It is slowly soluble in water ( 3.2 g/lat 25°C). Also, it is a flammable liquid (ADR Class 3, UN Number 3272, flash point 21°C) and boils at 115°C.
Odor is fruity green-fruity, reminiscent of apple and taste is sweet, fruity, apple, ripe.
To be used:
- in perfumery for fruity, fresh volatile top notes
- in flavor compounds for fruity notes
