Starch or amylum is a polymeric carbohydrate consisting of numerousglucose units. Pure starch is a white, tasteless and odorless powderthat is insoluble in cold water. In industry, starch is oftenconverted into dextrines, dextrose. These sugars may be fermented toproduce ethanol. The main commercial starches are cornstarch, wheat,tapioca, rice, and potato starches. In the pharmaceutical industrystarches are used as excipients.
